Pina Colada Ice Lollies

Summer is finally here and that means we should be reaching for icy treats to cool us down and keep us hydrated. But who says those frozen goodies can’t have a bit of adult naughtiness to them? And so, we make Pina Colada ice lollies of course. And why Pina Colada?  Doesn’t it just give you the tropical vibes that we are always craving when the mere thought of summer enters our minds after months of hibernating and hiding from the harsh winds of winter?  Bring on the sunshine!

These are so easy to make – the only equipment you need is a blender and some lolly moulds (I picked mine up in Sainsburys last week).  The only ingredients?  Malibu, pineapple, coconut and coconut milk.  And that makes them dairy free too – bonus!

Pina Colada Ice Lollies
Servings: 4
  • 350 g pineapple
  • 120 ml coconut milk
  • 50 ml Malibu
  • 1 tbsp dried or dessicated coconut
  1. Put the pineapple, coconut, coconut milk and Malibu in a blender and blend until smooth.

  2. Pour into the moulds and freeze for about 4 hours.
